Course Description:
This course builds upon the basic Chinese pastry skills and techniques. Advanced Chinese pastries also covers two categories of flour cuisine and rice cuisine, and further explore production through various doughs where students will develop their skills knowledge, including the difference between hot and cold-water mixed dough, leavening dough, laminated dough, and short crust. Modern presentation and high volume production will also be mentioned and discussed.
